Thai Veg Salad Recipe

Here is one of our favorite thai style veg salad recipe ... This was adapted from a CPK recipe, so due credit there ... This recipe contains some stuff that might not be readily available in your pantry, and might need a one time trip to HEB ... Also, as with any recipes, please use your discretion with some of the ingredients to make it more health conscious/ fat conscious or less (as desired) ... Some of the healthier substitutions are offered below ...
Since this is a salad, I am not specifying specific quantity ... just use discretion based on ingredients you like/ dislike ...
Ingredients
To chop
Field greens
Spinach
Cucumbers
Green onion
Matchstick Carrots
Cilantro
Cabbage
Top with
Thawed Edamame (frozen and shelled edamame available at HEB)
Salted Peanut / toasted edamame
Lemon juice
Wonton crisps/ chowmein style crisps (available in ethnic foods aisle at HEB)
Wasabi peas (available in ethnic foods aisle at HEB)
Thai Peanut dressing
Sliced Avocado
Chop everything in the "To be chopped" section... Mix everything... Add the thawed edamame, peanut, wasabi peas, lemon juice, thai peanut dressing, some salt seasoning and mix ... Top off with sliced avocado and wonton crisps/ chowmein style crisps...
